It can be a last minute dessert, it takes about 20 minutes to make it. In case you forgot to make dessert or the previous one has failed. Perfect choice, because who doesn't love chocolate pudding? It can also be an edible gift, if you have some nice spare jars around.

The first kiss is always a little nonsense, and never appropriate. It is an awkward moment that ends exactly like the first spoonful of pudding: lightly, peacefully and relieved, with slowly opening eyes and a certain, but invisible smile...

Ingredients

120 g fairtrade chocolate

3 free-range eggs

650 ml+200 ml organic cream

20 g corn starch

150 g local or fairtrade sugar

15 g fairtrade cacao powder

1,5 tsp salt

optional: 1 bay leaf

Preparation

It will take about 10 to 15 minutes to make it. It is very important that you NEVER stop stirring. Measure every ingredients before you start to simmer the cream. Slightly beat the eggs, mix the dry ingredients, place the copped chocolate into a big bowl, with a sieve next to it. Simmer the cream and pour together with the dry ingredients, stir over low heat for about 6-7 minutes, until it visibly thickens (test with making a line on the back of a spoon- but do not stop stirring:) ). Pour it over the eggs, while stirring. Heat it up again on very low temperature (so you don't make an omelette) while stirring. Keep doing it for a couple of minutes. Pour the whole over the chopped chocolate through the sieve. Add the extra 200 ml whipped cream to it very carefully, and pour the pudding into glasses.

If you want to make it with bay leaf, infuse it for ca. 5 minutes in the cream in the beginning. It adds a little twist to the pudding, and fits perfectly well with chocolate.
