Well, I had no idea, it was just suddenly done. I have never made it before, and it was so much fun. I made a friend, and together with her, a cake. More, than one. For 150 people, and it seemed they enjoyed it, just as much as we did making it.
So it happened this April, I was on my way home with bus 90 from Bologna to San Lazzaro, and had probably the best ice-cream of my life, when a really good friend called me, and if you wouldn't guess from the title why he called me, I tell you: he invited me for his wedding. I said, it is a good excuse to disturb the best ice-cream experience...I said, yes of course, I will participate, and what a surprise, and all the things you say, when you have such an invitation. But then, the next question followed: would you be so kind to make the cake? THE WEDDING CAKE?! Yes, yes, that one for 150 people. But, but.. I have never made one! I was convinced, and armed with courage, because he said: but you always make cakes. So I believed, I can make it.
Two weeks of thinking, planning, stressing, insomnia and I cancelled the whole thing. I called and said: I CANNOT MAKE A WEDDING CAKE, SORRY. But then time passed, I thought it over, and I said yes again. And meetings came, dozen of calls, texts, emails and the plan was finally done. Three kinds of desserts for a 150 people on the 25th of August, red cross in the calendar, I guess bigger than the couple's red cross.
I dared to say, I have one condition to make the desserts: they all have to be "sustainable". And it was not easy to define what I mean by that, but I meant, that I cannot have a party, and enjoy these sweets, while I know, that there are people somewhere, who produced the ingredients, were not paid enough, therefore they cannot even afford a normal plate of food. And we will use only local and seasonal ingredients. I meant local, local. So, we looked for farmers, who lived in the area, where the wedding took place on the countryside. We ordered milk, butter, cream, mascarpone, eggs. We used fairtrade and organic cocoa powder, same for the vanilla. And I brought coffee from Tanzania, which I picked. That was kind of cool, to cook with it! 🙂 And we decorated with flowers, herbs and grey stonecrops from the garden. The shopping took a week. And one week before the wedding I started to watch videos...how to make a wedding cake...So, I needed water level meter, a saw, a folding ruler, a cake stand, different spatulas. I was confused, so I just went to a cake-shop and said "Hi, what do I need for a tiered cake?". They looked strangely, but made a huge pack, so I was ready. But I was alone, and I had 2 days left.
There was already a lot of people at the place 2 days before the wedding to prepare the decorations, and everything. I sat down with my huge packages, a coffee and a cigarette and tried to call up the courage what I felt, when I said yes for this whole thing. My friend welcomed, and introduce me to a girl, who is going to be my help with the cakes. WHAT?! Help? I don't even know, what I want to do with all these eggs and cream, but to instruct an other person! Oh my...but she was called the same as I am, so I told her, it is a good start. So we walked to the shop, because we were missing something for the lunch...and there we were. Friends. Friends with the "click". And we enjoyed the two days full with improvisation, finding solutions, encouraging each other, laughing. And here you go, we made a wedding cake for a 150 people. No one died.
We had a couple of words to the wedding party, presenting the cakes. I said, what I already wrote here, I hope they got it. I hope you get it. Because it was a lot of fun, but for that I needed all the ingredients, what I accept, which are GOOD, FAIR and CLEAN, for me, for other people and for the planet.
