Ingredients

125 g flour, stoneground, local

100 g sugar, local

125 g butter, local

2 eggs, free range, local

3 bananas, fairtrade

50 g chopped hazelnut, local

pinch of salt, local

Glazing: 50 g soft butter, 100 g icing sugar, 4 tbsp cacao powder, 1 tbsp water. Mix all the ingredients very well. Use fairtrade cacao.

Preparation

Combine sugar and butter in a bowl. Add the eggs one at a time. Add in the flour. Mash the bananas and add them to the batter, mix it well, add hazelnut too. Pour the batter into a mold lined with baking paper. Bake in the oven at 180 degrees for about 30 minutes – check it with a fork/cake tester needle. Cool it down before glazing. I know, it is hard to wait. And I could not.

It is fun to bake a cake, decorate and eat it, but for that to be a good one, you need quality ingredients. Be responsible, when you shop, and buy fair, clean and good ingredients. If you work with animal products, make sure they had a good life. For your physical and mental health, for the sake of livestock, and the environment, and for people who work with agriculture.
