After I started make my own bread, I realized the difference between the ones I buy and bake. If I want to eat something, which I call bread, I need to pay for it a lot of money, so I decided to bake my own, which costs much less. And when I do not feel like it, I just buy one from a very good bakery. But I never buy so-called bread in supermarkets, because it is simply not bread. Because bread that comes from a plasticbag is not bread. Because bread with more than three ingredients is not bread. Because bread which does not have a crust is not bread. Because bread does not make you feel full or sick. And last but not least bread without soul is not bread. The "soul" is the result of the cooperation between the high quality, local and living ingredients and the creative human hands.
And that is actually a huge problem with many things today. Things looks like something, but as soon as you get closer, as soon as you taste them...it turns out that all the costs went for marketing and not for actual ingredients: quantity instead of quality generally. And now we are used to cheap things. Cheap bread. And you get it in the shops. 1 euro bread. In a quality bakery four times more. You can argue: it is only flour and yeast, isnt it?! Well that is the problem, that it is not only those.

If you want to eat bread from flour, salt and water (yeast) which is called BREAD, you need to pay for it. But why is that? Well, it is because someone is actually working on it, in a small bakery with hands, and not a machine. In the oven only 10 breads can fit and not 100. It needs to raise for ten hours, and not for 20 minutes. Because good taste takes time.
Baking at home is very simple. You spend one day a month of making bread, and fill up the freezer. In the evening you just take out some for the next day. And so you have fresh bread every day.
Unbelieveable, but such simple thing as a slice of bread is something which can give you one of the biggest pleasure. If it is a good bread, like the one I had last week, you spread a tiny bit of salted butter on it, start to chew and after the first bite has reached your tastebuds, you instantly close your eyes, and think: "was that bread I ate before"?! If you want to make something good to yourself, start eating high quality bread, and check the effects of it on your life.

In a slice of bread everything which is important in life can be destroyed. Bad agriculture, which is working against nature, and sistematically destroy it. Mills, which take out everything valuable from wheat, leaving only starch, and grinding with heated up metal, and kill everything which was alive in it. Baking factories, that try to make it up again, and cover the tasteslessness with additional flavourings, vitams, which were taken out before, and more sugar and preservatives for a longer shelf life. This is a bread which humans should be ashamed of. This is not bread, this is the opposite of life.
But in a slice of bread, gastronomy can unite everything which is important in life. Agriculture, which is making good quality crops, while working together and not against nature's cycles. Mills, which grinds wheat with stones, making wholegrain flours, leave everything alive in the flour which was there from the beginning. Artists of breadmaking, who use only ingredients which need to be used, and let the bacterias make the bread as it is. Who believe they are only controlling, but not changing anything. This kind of bread is good for you, brings good bacterias to your guts, which take care of your physical and menthal health.
Making bread is art, working together with nature and its tastes, textures, colors and moods. The only thing we can learn about it, but very well, is how to control these elements, and how to play along, so when a piece of bread reaches your tastebuds, you hear the most beatiful music, which is just waiting to be played and enjoyed by someone. Ingredients
400 g stonegrounded flour
12 g yeast
10 g salt
260 ml warm water
nuts, spices, seeds to put it, or just for decoration
Mix the yeast with warm water in a big bowl. Mix the flour with salt in a smaller bowl, add it to the other bowl, mix it well, let it rest for 10 minutes, cover with the smaller bowl. After 10 minutes, pull the dough from the bottom and press it to the middle. Turn the bowl and repeat it a couple times, so you are streching the dough. Let it rest for an other 10 minutes. Repeat this whole procedure 3 more times. Do the streching once more, and let the dough rest for one hour, under cover. The good thing about making this dough, or basically any kind of bread, is that you have a lots of time to do other things, just always keep the bread in mind. Do not set an alarm, just simply keep in mind, that what you do in these couple of hours, is making bread, everything else is secondary. Otherwise your bread will not turn out very good, no one likes to be second, especially not bread.
After one hour, hit your fist into the middle of the dough, so air can leave. Flour a surface for the dough, and slice it into 80 gram pieces (from this amount you can make 8 buns). Shape them into buns, cover and let it rest for 20 minutes. Turn on the oven for 240 degrees, and place a bowl of water in it. Reduce the temperature to 200 degrees, and bake the buns in a baking tray covered with baking sheets and dusted with flour for 20-25 minutes. Eat them fresh or freeze them.
