Hungarian or not, I learnt it in Hungary, and my Hungarian mother made it in my whole childhood in Hungary. So call it, as you want. 🙂
Krumplipogácsa/ Potato scones
We always made it, when we expected guests, because it is easy, cheap, and nothing is better next to a glass of wine/beer and a friendly talk. It is much better than buying those horrible, cheap, salty scones in the supermarkets. And maybe it does not taste better than the ones in the bakery, but it is definitely cheaper, and HOMEMADE. Don't forget to stop eating it!
You will need...
250 g of local/organic boiled, mashed potatoes
250 g local, organic flour (if you can find, biodynamic)
250 g local/organic butter (if you can find, biodynamic)
2 free-range eggs
local salt
So, you cook the potatoes with skin. Just because it is easier to peel it afterwards. Start in cold water, never put the potatoes into warm water. It is going to make the starch stiff, and it is never going to be soft again. Buy the potatoes from a local place, if you can on a market, or from the neighbor. When they are soft, peel them and mush them immediately. Cool it down, and mix with the soft butter and the flour, salt and one egg. Mix it well, and then roll it out twice, just if you were making croissant. Put it to a cool place for 3-4 hours to chill. When time is up, roll it out again one centimeter thick, and cut out small round shaped scones. If you don't have a cookie cutter, use a small glass. After each cutting, dip the glass into some flour, so it is not going to stick to the dough. Place them on a baking tray, covered with paper. Brush them with the other, whisked egg and put them into the preheated, really warm (220-230 degrees) oven. It is done in like 10-15 minutes. It is the best, when it's warm!
