Some say, if the agriculture is balanced, then the society is balanced too, so are the people. In general, all of these things are unbalanced in the so-called 'west', and it is because there is no real connection between them. But how to restore it? I think people can reconnect to nature, and on this way have a better understanding of agriculture through their food. Everything would be more balanced again.
I found it interesting, that some say, there are some of the same microbes in the soil, as in the plants and in the animals, that are our food,- so in our gut. But there are less and less microbes in the dying soil, so in our food, consequently in our gut. Most of us, most of the time eat hygienically clean food. We do not eat bacterias anymore. They were almost completely removed from out diet, and now we start to acknowledge the consequences. They start to make connection again between soil-food and gut, and not by chance. A lot of researches have already confirmed it. If we eat more bacteria, maybe we would be more connected to the nature around us and to each other? Maybe we could live in greater harmony with each other and ourselves? Maybe we would be healthier and balanced? Maybe.

We can have access to different foods, ingredients that have bacterias. Some of them, you can make at home. I started to make sourdough bread almost 3 years ago. Make a sourdough for yourself, for your family, for your friends and share the bread, that you made, with love and lactic acid bacterias, and yeasts. Put some bacterias back to your diet, and you will see and feel the differences. Do not imagine something holistic, closed-eyed, magical, hocus pocus reconnection with mother nature, you are just simply going to feel better. Because you make it, you eat it and you share it. Because you (maybe) reconnect the soil with your food, and so with your gut. If you have a happy gut, you are most likely a happier person.

Not all of the superfoods are bad for your wallet. Sourdough bread is one of them.

How to start a sourdough bread? With a sourdough! Clean a jar, and a spoon very well. You can make it on different ways, I write two options. One. Put one spoon of flour into the jar with two spoons of water, mix. Let it sit for a day. For the next 2-5 days repeat the whole process, add flour and water. Two. If you want to work with more flour and water, if you want to be more precise. Mix 150 g of flour with the same amount of water. The next day you remove the half of it and replace with 75 g of flour and 75 g of water. You keep doing the procedure, until the sourdough is ready.
In both cases the water should be warm. The water is going to activate your flour, so you will notice a sweet, ripe fruit smell and bubbles on the surface. If it is not a pleasure to keep your nose close to the jar, it means there are not only 'good' bacterias in it, throw it out, restart. If you see mold, throw it out, restart. You might succeed the first time, but if not, don't give up. Keep feeding your sourdough, take good care of it, it is like a pet. Don't store it too cold, neither too warm. If you don't succeed, you can relocate the jar. It is alive, it has the right to feel good. You will see and smell, when it does. The easiest way to check if it is ready to rise your bread is this: drop a spoonful of sourdough into warm water, if it floats, it is ready. So you can use it, and start to make bread with it.
You can slow down your sourdough by putting it into the fridge. In this way, you do not have to "feed" it everyday. You can also freeze it, if you go on a vacation, and don't want to ask the neighbor for a crazy favour, like feeding a jar...
So, now you know how to start it. It is going to take a while until you can start the first bread, so in a week I will write an easy, but still time-consuming bread recipe. If you start today, your sourdough might be ready for the next weekend, when you have a day to make your own bread...Vi ses!
