Donuts are primarily winter foods, and not by accident. They are heavy, greasy and generally we like the opposite in the warmer months. For a couple of days there was pretty cold, rainy and windy weather out here, so I felt like making them, even if it is already April...
Try to get the ingredients from as local sources as possible. All of these ingredients are available almost everywhere. Always keep in mind, that milk would go the calfs, if we did not drink it. Eggs would become baby chicks, if we didn't eat them. So, if you decide to consume these products, at least make sure to buy them from reliable sources. Most of the time, it means paying more money. If you still do not feel like paying more, even if it means a better quality of life for the animals, I suggest a short visit on a conventional animal farm. Good food can only be made from quality, fair and clean ingredients.

Ingredients (20-25 pieces)
500 g flour
210-230 ml milk
40 g yeast
50 icing sugar
60 g butter
5 egg yolks
salt
oil to fry
apricot jam
icing sugar
All your ingredients should be on room temperature, and the room where you work must have a stable warm temperature. Schedule airing for an other time.
Mix the yeast with some warm milk, cover it, let it rise for about 15 minutes. Mix flour, salt, sugar, the egg yolks, and slowly add the rest of the warm milk, while you are kneading the dough (preferably with a machine). In the end, knead in the soft butter. Cover it, and let it rise for an hour.

Roll it out, fold in half and roll it out again, so it is approx. 2 cm thick. Cut out 7 cm diameter donuts. If you don't have a cookie cutter, a cup will work perfectly. Cover them, let them rise for about 10-15 minutes, but not more. Meanwhile, prepare for frying. Pour enough oil into a pan, so donuts can float in it. Heat up the oil, but not until smoking point! Try out the frying with one donut! at first, so you are not going to burn 5 of them. Place the donut in the oil face down, and turn it, when the bottom is brown enough (it will take about 20 seconds) then turn. Take it out on a plate covered with kitchen paper. Cut the donut in half, check if the inside is cooked! If it is, continue with the other donuts. If not, reduce the temperature of the oil. Donuts like to burn on the outside and stay raw in the middle. Experiment with your dough, oil tempreature, pan, time and eventually your donuts will be irrecusable!
Sieve icing sugar on the top of them and flavor with apricot marmalade, if you would like to. Homemade jam is always better ;)! You can also fill the donuts with jam, cream, pudding etc...
